  • 3100 g water
  • 5 g ground black pepper
  • 2 g allspice
  • 3 g bay leaf
  • 5 g marjoram
  • 25 g oregano
  • 5 g coriander seeds
  • 2200 g raw pork belly
  • 2 g juniper
  • 80 g curing salt
  • 40 g sugar
  • 40 g garlic
  • 80 g salt

Method of cooking:

  1. Place all dry ingredients, except oregano, in a bowl and grind for 1 minute at speed 20.
