- 3100 g water
- 5 g ground black pepper
- 2 g allspice
- 3 g bay leaf
- 5 g marjoram
- 25 g oregano
- 5 g coriander seeds
- 2200 g raw pork belly
- 2 g juniper
- 80 g curing salt
- 40 g sugar
- 40 g garlic
- 80 g salt
Method of cooking:
- Place all dry ingredients, except oregano, in a bowl and grind for 1 minute at speed 20.
