Ingredients:

  • 300 g water
  • 2 g marjoram
  • 300 g red onion
  • 1 g freshly ground pepper
  • 750 g duck meat
  • 80 g dried cranberries
  • 6 g garlic
  • 12 g salt
  • 30 g butter
  • 100 g Wine, red
  • 60 g chicken eggs, whole
  • 700 g wheat flour, type 550
  • 20 g honey

Method of cooking:

  1. Remove the skin from 750 g of duck breast, cut it into 1x1 cm cubes. Remove the membrane and tendons from the meat, then cut it into cubes, place on a large plate and freeze for 30 min.
