Ingredients:
- 300 g water
- 2 g marjoram
- 300 g red onion
- 1 g freshly ground pepper
- 750 g duck meat
- 80 g dried cranberries
- 6 g garlic
- 12 g salt
- 30 g butter
- 100 g Wine, red
- 60 g chicken eggs, whole
- 700 g wheat flour, type 550
- 20 g honey
Method of cooking:
- Remove the skin from 750 g of duck breast, cut it into 1x1 cm cubes. Remove the membrane and tendons from the meat, then cut it into cubes, place on a large plate and freeze for 30 min.
