Ingredients:
- 600 g water
- 600 g sweet pepper
- 4 g hot paprika powder
- 8 g herb spices
- 3 g smoked paprika
- 1 g bay leaves
- 40 g sweet paprika
- 3 g ground coriander
- 3 g ground cumin
- 250 g Onion, raw
- 80 g Lard
- 20 g salt
- 100 g Wine, red
- 1200 g Pork, shoulder
- 15 g wheat flour, type 550
- 400 g Cultivated mushroom, raw
- 50 g Oil, rapeseed
- 2 g potato starch
Method of cooking:
- Clean the meat from excess fat and hard parts, cut into cubes with a diameter of 4 cm and marinate in spices and whole bay leaves with onion cut into eighths and oil. Mix and leave to marinate for at least 2 hours, but preferably 48 hours.
