Ingredients:
- 2300 g water
- 8 g ground black pepper
- 2 g allspice
- 2 g bay leaf
- 4 g marjoram
- 4 g coriander seeds
- 1 g juniper
- 40 g curing salt
- 20 g sugar
- 30 g garlic
- 40 g salt
- 1500 g Pork, loin, without bone, raw
Method of cooking:
- Open the bowl. Add 40 g of pickling salt, 40 g of salt, 4 allspice, 4 bay leaves, 2 teaspoons of pepper, 20 g of sugar, 2 teaspoons of coriander seeds, 2 heaped teaspoons of marjoram and 2 pieces of juniper, optional. Close the bowl with a lid with a measuring cup. Grind for 1 minute at speed 20.
