Turkey tajine

A tagine is a traditional clay pot for cooking over an open fire. The same name is used for a traditional Moroccan dish that has been prepared in this pot for centuries. This is not a classic recipe, but rather a method of cooking a dish in one pot. You can use different types of meat, fish, seafood, vegetables or fruits and even nuts to prepare.

Ingredients:

  • 80 g lime
  • 25 g coriander leaves
  • 100 g shallots
  • 80 g extra virgin oil
  • 3 g ground cinnamom
  • 7 g cumin seed
  • 3 g coriander seeds
  • 3 g hot paprika powder
  • 1000 g turkey leg
  • 3 g smoked paprika
  • 25 g raisins
  • 70 g dried apricot
  • 300 g eggplant
  • 50 g blanched almonds
  • 16 g garlic
  • 100 g Carrot
  • 6 g salt
  • 120 g white dry wine
  • 250 g tmato
  • 100 g Celeriac
  • 50 g parsley root
  • 80 g Olives green, in brine, canned

Method of cooking:

  1. Mix 1000 g of meat cut into 3-4 cm pieces with ⅔ teaspoon of cinnamon, ⅔ teaspoon of hot pepper, ⅔ teaspoon of smoked paprika, 1 teaspoon of cumin, 1 teaspoon of ground coriander, 1 heaping teaspoon of salt and 8 tablespoons of olive oil. Mix everything. Set aside for 30 min, preferably 24 hours, to marinate.
