"Solianka" soup

An extremely hearty soup, interesting combination of many types of meat with acidic foods such as pickled cucumbers, but also olives and lemons. This combination is proof of the centuries-old origin of this dish. In the 18th century, the use of olives and citrus fruits imported was a determinant of social status. The clash of fashion for imported ingredients with traditional cuisine created a great and tasty recipe. We definitely recommend trying it.

Ingredients:

  • 1100 g water
  • 1 g allspice
  • 100 g broth paste - CVR
  • 150 g pork sausage
  • 1 g bay leaves
  • 100 g black olives
  • 15 g capres
  • 500 g beef
  • 180 g Onion, raw
  • 16 g garlic
  • 100 g Carrot
  • 60 g Lemon
  • 50 g butter
  • 500 g Pork, shoulder
  • 400 g Cream, 18% fat
  • 150 g Pork, belly, without bone, smoked
  • 25 g Dill
  • 70 g Celeriac
  • 25 g parsley leaves
  • 70 g parsley root
  • 100 g tomato paste 30%, canned
  • 100 g Olives green, in brine, canned
  • 250 g Cucumber, pickled

Method of cooking:

  1. Into the clean bowl add 1 bunch of parsley leaves, 1 bunch of dill cut into 3 cm pieces. Chop for 5 s at speed 20. Transfer into the container and put into the fridge.
