This recipe is a basic version, you can enrich it with your favorite flavor or make a chocolate version by replacing part of the flour with cocoa. This ratio allows you to make a full size sponge cake. Ideal for layering with cream.

Ingredients:

  • 180 g wheat flour
  • 200 g sugar
  • 1 g salt
  • 420 g chicken eggs, whole
  • 40 g potato starch

Method of cooking:

  1. Separate the whites from the yolks (keep the yolks). Place the whisk. Whip the egg whites with salt until foamy for 3 minutes at speed 6.
