One of the most famous Thai coconut soups. Tom kha is a mild soup with chicken and plenty of refreshing ginger, lemongrass and kaffir lime.

Ingredients:
- 1400 g water
- 40 g ginger
- 80 g lime
- 25 g coriander leaves
- 30 g sugar, brown
- 80 g soy sauce
- 120 g shallots
- 3 g cumin seed
- 1 g coriander seeds
- 40 g fish sauce
- 150 g shimei mushrooms
- 1 g lemongrass
- 1 g kaffir lime leaves
- 16 g garlic
- 800 g condensed coconut milk
- 45 g Oil, sesame
- 1200 g chichen thighs
Method of cooking:
- Add 120 g of shallot, 40 g of ginger and 4 cloves of garlic. Chop for 10 s at speed 12. Using a spatula to scrape the bowl’s sides.
