Ingredients:

  • 1 g white pepper
  • 120 g shallots
  • 150 g cream 30 %
  • 2 g granulated garlic
  • 60 g butter, clarified butter (ghee)
  • 800 g minced veal meat
  • 1 g spices, tarragon, dried
  • 6 g salt
  • 80 g Bread crumbs
  • 60 g chicken eggs, whole
  • 50 g Plain wheat rolls

Method of cooking:

  1. Add 120 g of peeled and cut shallot. Chop for 10 s at speed 10. Using a spatula scrape the bowl's sides. Add older bun crushed into smaller pieces (or 50 g of breadcrumbs) and 150 g of 30% cream. Mix for 1 min at 30 s at speed 8.
