Ingredients:

- 120 g shallots
- 150 g cream 30 %
- 2 g granulated garlic
- 60 g butter, clarified butter (ghee)
- 800 g minced veal meat
- 1 g spices, tarragon, dried
- 6 g salt
- 80 g Bread crumbs
- 60 g chicken eggs, whole
- 50 g Plain wheat rolls
Method of cooking:
- Add 120 g of peeled and cut shallot. Chop for 10 s at speed 10. Using a spatula scrape the bowl's sides. Add older bun crushed into smaller pieces (or 50 g of breadcrumbs) and 150 g of 30% cream. Mix for 1 min at 30 s at speed 8.
