Old Polish gingerbread - cake
Traditional Christmas baking is gingerbread. Among the various types, Old Polish gingerbread is the most demanding. The preparation takes several weeks, because the dough mixed with a lot of honey has to mature for a long time in the cold. It is worth the effort because the texture and taste of this gingerbread is unique. This pastry was already known in Poland in the Middle Ages, known as ToruĊ. Gingerbreads are often covered in chocolate or frosting and the center is filled with dried fruit, jam or nuts.

Ingredients:
- 8 g sodium bicarbonate
- 40 g gingerbread spice
- 250 g sugar
- 3 g salt
- 100 g butter
- 120 g chicken eggs, whole
- 500 g wheat flour, type 550
- 250 g honey
Method of cooking:
- Add 100 g of butter, 250 g of sugar, 250 g of honey. Melt for 6 min at 110 degrees and speed 4 reverse rotation.
