Chive mayonnaise
Mayonnaise has a neutral taste. Thanks to the right balance of fat and acid as well as salt and sugar, it goes with almost everything. Thanks to its high fat content and intense seasoning, it enhances and brings out the flavour of whatever it is added to, but you can also give it an individual flavour profile by preparing it on the basis of already flavoured oil.

Ingredients:
- 10 g vinegar
- 10 g sugar
- 3 g salt
- 60 g chicken eggs, whole
- 20 g mustard
- 500 g chive oil CVR
Method of cooking:
- Put a tall bowl (or a jug) on the lid without a measuring cup, weigh out 500 grams of CVR chive oil and set aside.
