Bigos is an old Polish dish that is often associated with our domestic culinary tradition. It is served at family celebrations or festive occasions and pleases with its complex taste. The longer it cooks, the better, so prepare it well in advance.

Ingredients:

  • 800 g water
  • 1 g ground black pepper
  • 2 g allspice
  • 1 g bay leaf
  • 2 g marjoram
  • 25 g dried mushrooms
  • 300 g steamed smoked bacon
  • 1000 g sour cabbage
  • 1 g juniper
  • 250 g brittle smoked sausage
  • 1 g ground cumin
  • 350 g Onion, raw
  • 5 g sugar
  • 20 g Lard
  • 6 g salt
  • 80 g Plums without stones, dried
  • 50 g tomato paste 30%, canned
  • 700 g Pork, belly, without bone
  • 100 g beef broth paste

Method of cooking:

  1. On the lid of the bowl place a container, weigh 25 g of dried mushrooms and pour it with water (500 g). Put the bowl with the soaked mushrooms aside for 2 hours, preferably overnight.
