Green pea puree

A colourful alternative to classic puree, it works well as an accompainment to many dishes. It tastes delicious combined with both fish and meat.

Ingredients:

  • 100 g water
  • 1 g ground black pepper
  • 8 g broth paste - CVR
  • 25 g shallots
  • 5 g fresh mint
  • 10 g garlic
  • 1 g salt
  • 60 g butter
  • 450 g Peas green, frozen

Method of cooking:

  1. Add 2 cloves of peeled garlic and 2 shallot bulbs, peeled and cut into smaller pieces, to the cup. Chop for 10 seconds at speed 10.
  2. Add butter, stock paste, frozen peas, mint and water.
  3. Grind for 2 minutes at 60°C at speed 10.
  4. Season with salt and pepper, mix for 3 minutes at 95°C at speed 6.
  5. Serve the puree as an accompainment to main dishes.
