Piccata is an Italian way of preparing food, which involves frying, then removing the main ingredient and pouring a little wine to bring out all the flavors. Capers, parsley and butter are often added to piccata-style dishes.

Ingredients:

  • 2 g ground black pepper
  • 50 g capers
  • 200 g vegetable broth
  • 8 g salt
  • 100 g butter
  • 25 g lemon juice
  • 100 g white dry wine
  • 50 g Oil, olive
  • 400 g Salmon, raw
  • 30 g parsley leaves

Method of cooking:

  1. Put a small bowl on the lid of the bowl without a measuring cup and weigh out 400 grams of skinless salmon, cut into 3 cm cubes. Season with 1 teaspoon of salt and 1 teaspoon of ground black pepper. Set aside.
