Easter Murzin

Murzin is an Easter baked bread from Cieszyn Silesia. It is a well-baked yeast cake with pieces of cold cuts. The name comes from the colour of the bread - it was once baked from dark flour in wood-fired ovens - when adding fuel, the ash settled on the dough and gave it a very dark color on top.

Ingredients:

  • 1 g ground black pepper
  • 2 g marjoram
  • 200 g Onion, raw
  • 40 g sugar
  • 100 g butter
  • 60 g chicken eggs, whole
  • 200 g Sausage “Śląska”, pork
  • 40 g chicken eggs, yolk
  • 150 g Pork, belly, without bone, smoked
  • 300 g Milk, 2.0% fat
  • 30 g Yeast baker's, compressed
  • 40 g Oil, rapeseed
  • 150 g Pork, ham cooked
  • 615 g wheat flour 450
  • 5 g black cumin

Method of cooking:

  1. Add 300 grams of milk, 40 grams of sugar and 30 grams of yeast into the bowl. Heat for 1 minute at 40℃ at speed 4 reverse rotation. Leave in the closed bowl for 15 minutes.
