Bacon and mozzarella muffins

Ingredients:
- 1 g ground black pepper
- 100 g shallots
- 50 g mozzarella
- 3 g salt
- 15 g Chives
- 180 g chicken eggs, whole
- 50 g Cream, 18% fat
- 150 g Pork, belly, without bone, smoked
- 40 g Oil, olive
Method of cooking:
- Put a small bowl on the lid of the bowl without a measuring cup and weigh out 50 grams of grated mozzarella cheese and set aside. Add 100 grams of onion and shallot, peeled and cut into smaller pieces, into the bowl. Chop for 10 seconds at speed 10. Add 40 grams of olive oil and 150 grams of bacon cut into slices and then into 3 cm strips. Fry without a measuring cup for 3 minutes at 130℃ at speed 3 reverse rotation. Continue frying without the measuring cup for 5 minutes at 110℃ at speed 2 reverse rotation.
