A very tasty alternative to classic fries. Made from cooked potatoes and aromatic cheeses, these fries are crispy on the outside and soft on the inside.

Ingredients:

  • 1000 g water
  • 100 g grana padano cheese
  • 6 g salt
  • 20 g Oil, olive
  • 700 g Potato, long stored
  • 100 g potato starch
  • 50 g Cheese, Cheddar, full-fat

Method of cooking:

  1. Add 1000 grams of water to the bowl. Place the first floor of the steam pot on the lid of the bowl without a measuring cup and weigh 700 grams of peeled and diced potatoes in it. Cook for 35 minutes at 140°C. Remove the steam pot with the potatoes and place it on the inverted lid to cool. Pour the water out of the mixing bowl and dry it.
