Ingredients:
- 375 g mascarpone
- 20 g orange liqueur
- 1 g spirit vinegar 10 %
- 50 g raspberries
- 270 g sugar
- 60 g chicken eggs, yolk
- 180 g chicken egg whites
- 6 g potato starch
- 50 g Blackcurrants jam, low-sugar
Method of cooking:
- Place a bowl on the lid of the mixing bowl and weigh 225 grams of sugar in it. Install the whisk in the bowl and add 180 grams of egg whites at room temperature. Whip for 5 minutes at a speed of 5 rotations. In the next step, while whipping, gradually add the weighed sugar through the opening in the lid. Whip for 7 minutes at a speed of 7 rotations.
