Stuffed potato croquettes with spinach

Ingredients:
- 1000 g water
- 1 g ground black pepper
- 1 g chili powder
- 12 g garlic
- 8 g salt
- 80 g Bread crumbs
- 60 g butter
- 120 g chicken eggs, whole
- 200 g Wheat flour, type 500
- 200 g spinach
- 80 g Cheese, Parmezan
- 60 g Oil, rapeseed
- 850 g Potato, long stored
- 50 g potato starch
Method of cooking:
- Place a bowl on the lid of the mixing bowl without a measuring cup and weigh 80 grams of grated parmesan into it. Set aside. Add 3 peeled cloves of garlic to the mixing bowl. Chop for 10 seconds at a speed of 10 rotations. Add 60 grams of soft butter cut into smaller pieces. Fry for 1 minute at 100°C at a speed of 3 rotations.
