Ingredients:

  • 900 g water
  • 1 g ground black pepper
  • 60 g broth paste - CVR
  • 100 g cream 30 %
  • 100 g mozzarella
  • 60 g dried tomatoes
  • 120 g Onion, raw
  • 20 g garlic
  • 120 g Carrot
  • 6 g salt
  • 600 g medium potatoes
  • 400 g Pork, loin, without bone, raw
  • 500 g tomato passata
  • 80 g clarified butter

Method of cooking:

  1. Place a bowl on the lid of the mixing bowl, reset the scale, and weigh 400 grams of pork loin. Divide it into 4 equal slices. Pound each slice thinly with a meat mallet. Season both sides of each slice with 2 pinches of salt and 1 pinch of freshly ground black pepper. Set aside.
