A type of yeast pancake made from buckwheat-wheat or buckwheat-rye flour. Blinis were once consumed in Russian, Ukrainian, and Belarusian tradition during the Maslenitsa holiday; today they are also served as a daily meal in many ways.

Ingredients:
- 6 g sugar
- 3 g salt
- 180 g chicken eggs, whole
- 80 g Wheat flour, type 500
- 200 g Milk, 2.0% fat
- 20 g Yeast baker's, compressed
- 80 g Buckwheat flour
- 50 g clarified butter
Method of cooking:
- Separate the whites from the yolks of 3 eggs at room temperature and set aside.
