Ingredients:

  • 2000 g water
  • 1 g ground black pepper
  • 1 g fresh mint
  • 30 g Tahini
  • 1 g chili flakes
  • 5 g garlic
  • 46 g salt
  • 10 g lemon juice
  • 500 g broad beans, raw
  • 36 g Oil, olive

Method of cooking:

  1. Add 2000 grams of water and 40 grams of salt to the bowl. Cook for 10 minutes at 140°C. Place the cooking basket in the bowl and weigh 500 grams of broad beans in it. Cook for 15 minutes at 115°C. Carefully remove the basket and cool the broad beans under cold water. Peel the skin off the beans.
