  • 1 g salt
  • 270 g butter
  • 60 g chicken eggs, yolk
  • 20 g Cream, 18% fat
  • 500 g milk, 2.0% fat
  • 60 g potato starch
  • 300 g wheat flour 450

Method of cooking:

  1. Insert the whisk in the bowl. Add 125 grams of milk, 2 egg yolks, 60 grams of potato starch to the bowl. Mix for 20 seconds at a speed of 10 rotations. Pour the contents of the bowl into a small bowl and set aside.
