Karelian pies are a traditional Finnish specialty. They are made with a combination of wheat and rye flour and filled with various stuffings — the most popular today being savory rice cooked in milk. The pies are baked in the oven and brushed with butter afterward.

Ingredients:

  • 250 g water
  • 12 g salt
  • 200 g Rice white polished
  • 50 g butter
  • 60 g chicken eggs, whole
  • 300 g Rye flour, type 2000
  • 1000 g Milk, 2.0% fat
  • 25 g Oil, rapeseed
  • 100 g wheat flour 450

Method of cooking:

  1. On the lid of the mixing bowl (without the measuring cup), place a bowl, reset the scale, and weigh 300 grams of rye flour and 100 grams of wheat flour. Set the weighed ingredients aside.
