Ingredients:
- 400 g water
- 1 g white pepper
- 1 g nutmeg
- 1 g marjoram
- 5 g fresh mint
- 60 g Onion, raw
- 100 g Carrot
- 50 g Apple
- 3 g salt
- 100 g broccoli, green, raw
- 150 g Brussels sprouts, raw
- 10 g Sunflower seeds, dried
- 40 g clarified butter
Method of cooking:
- Add 40 grams of clarified butter to the bowl. Melt for 2 minutes at 110°C at a speed of 4 rotations. Add 60 grams of peeled onion cut into smaller pieces. Chop for 10 seconds at a speed of 10 rotations. Scrape the contents down to the bottom of the bowl using a spatula. Fry for 3 minutes at 105°C at a speed of 3 reverse rotations.
