Ingredients:

  • 800 g water
  • 1 g white pepper
  • 1 g nutmeg
  • 150 g gruyere cheese
  • 6 g salt
  • 60 g butter
  • 40 g wheat flour, type 550
  • 40 g chicken eggs, yolk
  • 500 g Milk, 2.0% fat
  • 350 g broccoli, green, raw
  • 300 g Cauliflower

Method of cooking:

  1. Add 800 grams of water to the bowl. Place the first floor of the steamer on the lid of the mixing bowl without the measuring cup. Add 350 grams of broccoli and 300 grams of cauliflower washed and divided into smaller florets. Cook for 25 minutes at 140°C at a speed of 4 rotations.
