Traditional Sardinian Culurgiones are a type of dumplings, classically filled with a filling of boiled potatoes, sheep's cheese, mint, garlic, and spices.

Ingredients:

  • 150 g water
  • 1 g ground black pepper
  • 1 g nutmeg
  • 10 g fresh mint
  • 150 g pecorino romano
  • 12 g garlic
  • 8 g salt
  • 350 g wheat flour, type 550
  • 600 g Potato, boiled
  • 50 g Oil, olive
  • 20 g Oil, olive
  • 150 g sheep cheese

Method of cooking:

  1. Add 150 grams of Pecorino Romano cut into smaller pieces to the bowl. Chop for 20 seconds at a speed of 20 rotations. Transfer the contents to a small bowl and set aside. Wash and dry the bowl. Add 10 grams of mint leaves to the bowl. Chop for 5 seconds at a speed of 20 rotations. Using the spatula, transfer the contents to the bowl with the previously prepared Pecorino Romano.
