Sardinian dumplings
Traditional Sardinian Culurgiones are a type of dumplings, classically filled with a filling of boiled potatoes, sheep's cheese, mint, garlic, and spices.

Ingredients:
- 150 g water
- 1 g ground black pepper
- 1 g nutmeg
- 10 g fresh mint
- 150 g pecorino romano
- 12 g garlic
- 8 g salt
- 350 g wheat flour, type 550
- 600 g Potato, boiled
- 50 g Oil, olive
- 20 g Oil, olive
- 150 g sheep cheese
Method of cooking:
- Add 150 grams of Pecorino Romano cut into smaller pieces to the bowl. Chop for 20 seconds at a speed of 20 rotations. Transfer the contents to a small bowl and set aside. Wash and dry the bowl. Add 10 grams of mint leaves to the bowl. Chop for 5 seconds at a speed of 20 rotations. Using the spatula, transfer the contents to the bowl with the previously prepared Pecorino Romano.
