Ingredients:
- 5 g lemon peel
- 200 g cream 36%
- 5 g orange peel
- 3 g cinnamon stick
- 70 g sugar
- 5 g sugar
- 80 g chicken eggs, yolk
- 200 g milk, 3,2% fat
- 30 g corn starch
Method of cooking:
- Attach the whisk to the bowl. Add 200 grams of milk 3.2%, 4 egg yolks, 200 grams of heavy 36% cream, 70 grams of sugar, and 30 grams of cornstarch to the bowl. Mix for 30 seconds at a speed of 6 rotations. Heat for 3 minutes at 70℃ at a speed of 6 rotations.
