Ingredients:

  • 5 g lemon peel
  • 200 g cream 36%
  • 5 g orange peel
  • 3 g cinnamon stick
  • 70 g sugar
  • 5 g sugar
  • 80 g chicken eggs, yolk
  • 200 g milk, 3,2% fat
  • 30 g corn starch

Method of cooking:

  1. Attach the whisk to the bowl. Add 200 grams of milk 3.2%, 4 egg yolks, 200 grams of heavy 36% cream, 70 grams of sugar, and 30 grams of cornstarch to the bowl. Mix for 30 seconds at a speed of 6 rotations. Heat for 3 minutes at 70℃ at a speed of 6 rotations.
