Norwegian yeast buns with whipped cream and raspberry jam, known as "fastelavnsboller," are a traditional treat served for Fastelavn, the Norwegian equivalent of carnival. These fluffy, buttery buns are made from yeast dough, which becomes light and delicately sweet after rising and baking.

Ingredients:

  • 1 g cardamom
  • 2 g baking powder
  • 30 g powdered sugar
  • 100 g sugar
  • 3 g salt
  • 100 g butter
  • 60 g chicken eggs, whole
  • 50 g Yeast baker's, compressed
  • 350 g milk, 3,2% fat
  • 500 g wheat flour 450
  • 300 g CVR whipped cream
  • 100 g raspberry jam

Method of cooking:

  1. Add 350 grams of milk and 100 grams of butter to the mixing bowl. Heat for 3 minutes at 80°C at a speed of 2 rotations.
