Soko sulgunit – Cheese-stuffed mushrooms

Soko means mushrooms in Georgian, and sulguni is a salty, rennet-based Georgian cheese that can be difficult to find outside the country. Although it is hard to buy, it can be replaced with other cheeses, for example, a combination of mozzarella and feta cheese.

Ingredients:

  • 150 g mozzarella
  • 150 g feta cheese
  • 100 g butter
  • 500 g Cultivated mushroom, raw
  • 30 g Oil, rapeseed

Method of cooking:

  1. Place a bowl on the lid of the bowl without a measuring cup, reset the scale, weigh 500 grams of cleaned medium-sized mushrooms without stems. Arrange the mushrooms in an ovenproof dish greased with 3 tablespoons of rapeseed oil and set aside.
