Migas

A traditional dish of Spanish cuisine, particularly popular in the Andalusia region. A type of stew prepared mainly from stale bread, olive oil, garlic, sometimes with the addition of vegetables and meat. Migas can be prepared in various ways, depending on the region and available ingredients.

Ingredients:

  • 200 g water
  • 1 g ground black pepper
  • 12 g chili peppers
  • 200 g chorizo sausage
  • 60 g garlic
  • 8 g salt
  • 100 g Pork, belly, without bone, smoked
  • 400 g wheat bread
  • 30 g Oil, olive
  • 10 g parsley leaves

Method of cooking:

  1. Place a bowl on the lid of the bowl without the measuring cup, reset the scale, and weigh 400 grams of stale bread cut into 2 cm cubes, add 200 grams of water and 1 teaspoon of salt. Cover with a towel and let rest in the fridge for 1 hour, stirring occasionally.
