Ingredients:

  • 700 g water
  • 1 g ground black pepper
  • 2 g anise
  • 2 g fennel seeds
  • 400 g Squash-summer, raw
  • 100 g Lemon
  • 150 g Orange
  • 3 g salt
  • 80 g butter
  • 600 g Cod, raw
  • 400 g Potato, long stored
  • 15 g parsley leaves

Method of cooking:

  1. Add the zest from 1 orange and 1 lemon with as little white pith (albedo) as possible to the bowl. Chop for 3 seconds at a speed of 14 rotations. Transfer to small bowl and set aside.
