  • 1 g ground black pepper
  • 30 g broth paste - CVR
  • 80 g shallots
  • 10 g fresh mint
  • 5 g garlic
  • 100 g white dry wine
  • 100 g Cream, 18% fat
  • 200 g milk, 3,2% fat
  • 10 g Oil, rapeseed
  • 300 g Peas green, frozen
  • 3 g Sea salt
  • 30 g wheat flour 450
  • 100 g Szynka serrano
  • 120 g Crème fraîche

Method of cooking:

  1. Place a bowl on the lid of the bowl and weigh 100 grams of sliced serrano ham in it. Set aside.
