Ingredients:
- 500 g mascarpone
- 20 g vanilla extract
- 2 g spirit vinegar 10 %
- 80 g raspberries
- 490 g sugar
- 1 g salt
- 120 g chicken eggs, yolk
- 320 g chicken egg whites
- 5 g potato starch
- 150 g raspberry jam
- 9 g ‘fix’ cream stabiliser
- 2 g Barwnik spożywczy
Method of cooking:
- Place a bowl on the lid of the bowl without the measuring cup, reset the scale, and weigh 400 grams of sugar. Attach the whisk to the bowl. Add 8 egg whites and 1 pinch of salt to the bowl. Whip for 2 minutes at speed 7 in reverse.
