Ingredients:

  • 500 g mascarpone
  • 20 g vanilla extract
  • 2 g spirit vinegar 10 %
  • 80 g raspberries
  • 490 g sugar
  • 1 g salt
  • 120 g chicken eggs, yolk
  • 320 g chicken egg whites
  • 5 g potato starch
  • 150 g raspberry jam
  • 9 g ‘fix’ cream stabiliser
  • 2 g Barwnik spożywczy

Method of cooking:

  1. Place a bowl on the lid of the bowl without the measuring cup, reset the scale, and weigh 400 grams of sugar. Attach the whisk to the bowl. Add 8 egg whites and 1 pinch of salt to the bowl. Whip for 2 minutes at speed 7 in reverse.
