Ingredients:

  • 1000 g water
  • 1 g ground black pepper
  • 1 g nutmeg
  • 13 g salt
  • 10 g butter
  • 20 g Corn flour (maize flour)
  • 800 g milk, 3,2% fat
  • 20 g Oil, rapeseed
  • 400 g Potato, long stored
  • 20 g chicken egg whites
  • 7 g potato starch
  • 600 g Cod, fillets without skin, raw

Method of cooking:

  1. Place a bowl on the lid of the bowl without the measuring cup, reset the scale, and weigh 600 grams of skinless cod fillet cut into 2 cm pieces. Place in the freezer for 15 minutes.
