Ingredients:
- 1000 g water
- 1 g ground black pepper
- 1 g nutmeg
- 13 g salt
- 10 g butter
- 20 g Corn flour (maize flour)
- 800 g milk, 3,2% fat
- 20 g Oil, rapeseed
- 400 g Potato, long stored
- 20 g chicken egg whites
- 7 g potato starch
- 600 g Cod, fillets without skin, raw
Method of cooking:
- Place a bowl on the lid of the bowl without the measuring cup, reset the scale, and weigh 600 grams of skinless cod fillet cut into 2 cm pieces. Place in the freezer for 15 minutes.
