Marinated fish fillets with chermoula sauce and couscous salad
Marinerte fiskefileter med chermoulasaus og couscoussalat is an aromatic dish in which delicate fish fillets are marinated in spices. Chermoula is an intense, herbaceous sauce based on coriander and spices, which gives the fish a deep flavour. A light couscous salad completes the dish, creating a harmonious blend of tastes and textures.

Ingredients:
- 610 g water
- 40 g coriander leaves
- 1 g ground cinnamom
- 80 g canned chickpeas
- 2 g cumin seed
- 1 g lemon peel
- 5 g ginger root
- 24 g chili peppers
- 1 g sweet paprika
- 100 g sesame oil
- 50 g black olives
- 2 g fennel seeds
- 1 g chili flakes
- 20 g garlic
- 60 g Carrot
- 3 g salt
- 30 g lemon juice
- 75 g Oil, olive
- 360 g Cod, fillets without skin, raw
- 3 g Sea salt
- 1 g Szafran
Method of cooking:
- To the dry bowl, add 5 grams of ginger cut into smaller pieces, 2 cloves of garlic, and 1 deseeded chili pepper cut into smaller pieces. Chop for 10 seconds at a speed of 20 rotations. Transfer to a small bowl, add 1/2 teaspoon of fennel seeds, 1/4 teaspoon of saffron, 1/2 teaspoon of sea salt, a pinch of cinnamon, and 3 tablespoons of olive oil. Mix thoroughly.
