Fattigmann "asparagus soup"

Asparagus is best in season, but we present a Fattigmann version without it, which tastes excellent all year round. So what to use when the asparagus season is over? Lettuce! Cooking lettuce brings out flavors similar to asparagus and is available throughout the year. Our favorite version is lettuce cooked with cream and onion, which gives it a creamy texture and deep flavour – perfect for chilly evenings when asparagus is not available.

Ingredients:

  • 250 g mixed salads
  • 120 g Onion, raw
  • 10 g garlic
  • 12 g salt
  • 75 g spinach
  • 20 g sunflower oil
  • 600 g Cream, 30% fat

Method of cooking:

  1. Add 1 onion cut into 4 pieces and 2 garlic cloves into the mixing bowl. Chop for 10 seconds at a speed of 10 rotations. Scrape the contents to the bottom of the bowl with a spatula. Add 20 grams of oil. Cook for 4 minutes at 105°C at a speed of 2 rotations.
