Ingredients:

  • 700 g water
  • 1 g ground black pepper
  • 100 g shallots
  • 300 g Squash-summer, raw
  • 200 g Carrot
  • 6 g salt
  • 100 g leek
  • 50 g parsnip
  • 40 g Oil, olive
  • 50 g Celeriac
  • 200 g Potato, long stored
  • 150 g Peas green, frozen

Method of cooking:

  1. Add 100 grams of shallots cut into small pieces and 100 grams of white part of leek cut into small pieces to the mixing bowl. Chop for 10 seconds at a speed of 10 rotations. Scrape down the sides of the bowl with a spatula. Add 40 grams of olive oil to the bowl. Fry for 5 minutes at 110°C at a speed of 4 reverse rotations.
