Ingredients:
- 700 g water
- 1 g ground black pepper
- 100 g shallots
- 300 g Squash-summer, raw
- 200 g Carrot
- 6 g salt
- 100 g leek
- 50 g parsnip
- 40 g Oil, olive
- 50 g Celeriac
- 200 g Potato, long stored
- 150 g Peas green, frozen
Method of cooking:
- Add 100 grams of shallots cut into small pieces and 100 grams of white part of leek cut into small pieces to the mixing bowl. Chop for 10 seconds at a speed of 10 rotations. Scrape down the sides of the bowl with a spatula. Add 40 grams of olive oil to the bowl. Fry for 5 minutes at 110°C at a speed of 4 reverse rotations.
